My wife and I love this recipe and thought I would share it. We originally found it on www.foodtv.com. It's by Giada De Laurentiis--so you know it's good! You can 'lighten' this dish by reducing the cream and subbing low-fat milk, also use whole wheat pasta instead of traditional. It's a great recipe for entertaining.

On Friday, November 12, Extreme Makeover: Home Edition surprised Jim and Carmen Simpson of Savannah with the news that they had been chosen as the recipients of a full home makeover! Carmen and Jim give back to their Savannah community as they raise three children, Zoe, Katelyn and Isaac. Zoe, the youngest, is their “miracle baby,” having beaten the odds after being born with a life-threatening disease.
Champion sent 5 volunteers to Savannah to help with the drying and clean-up. Brett Bishop and Jeremy Reets went down Sunday night and worked from Monday at 11 am until 5 am Tuesday. They set air-movers and Tes units to help speed the drying of the paint and drywall. They were worn out when it was all done but they had a great time and got to meet Paul DiMeo, Ed Sanders and Tracy Hutson! On Tuesday evening, Chloe Hudson, Icela Reets and Zach Reets headed to Savannah to assist in the cleanup of the home so that furniture and decorating could go in. They had the privilege of meeting Paula Deen and her husband. They are still cleaning right now so hopefully they can get it all done because...the big reveal is today!

So just a brief update on my attempt to become a runner. Saturday October 16th Zach and I ran our first race. I guess technically it is a race. In my mind, I am just running... not racing. That being said, it was a lot of fun! The race was very well organized thanks to the Peachtree City Running Club and we got really cool shirts for participating. I ran the 5k in 31 minutes and Zach ran the 15k in 1 hour 22 minutes.
Monday, March 22, 2010 at 10:37AM You might notice a theme in our blog-Hawaii vacations. Our Champion Construction Systems, Inc office is full of travelers and while we like to do water damage, we love to travel. By something of a coincidence, many of us have recently traveled to or will soon travel to Hawaii. My trip was last month and I have to agree with Nick Sharp, it was amazing. (Larry Banach went in the first part of February and we are still waiting on his post) I wanted to share some highlights.
-Humpback Whales. We were in Maui during the peak of the Humpback Whale season. In fact we even went to the Whale Festival! This is what I learned--Humpback whales migrate to Maui's warm waters from November to March to have their babies in the warm, shallow and safe waters. They don't eat while they are here and lose 1/2 of their body weight. Once the calves are ready, they migrate back to Alaskan waters where they normally live. These whales are an endangered species so it was really special to have the opportunity to see them. Although you wouldn't know they are endangered because they are everywhere. Hey! I'm Zach Reets and I am one of the rug cleaning technicians here at Champion. I'm going to briefly explain how we clean area rugs.
Step 1: Remove as much of the dry soil as possible (i.e. pet hair, dirt, dust, pollen etc). We do this by thoroughly vaccuming the front and back of the rug.
Step 2: Completely submerge the rug in water and then scrub it with an orbital buffer while applying rug shampoo.
Step 3: Give it proper dwell time. The more heavily soiled the rug the longer it will take.
Step 4: Rinse the rug through with the wand. Repeat steps 2 and 3 until water rinses clear.
Step 5: Extract the remaining water from the rug and hang to dry.
