Snow Day Recipe

The big news in the Atlanta area is we have been stuck in our homes for days. We were crippled with snow and ice. The good news is no school or work. We were all forced to have some much needed rest and relaxation, with a little bit of playing in the snow in between.  Hopefully, everyone heeded the warning of the impending snow storm and stocked up on groceries. If you forgot to get any dessert for your mini vacation, here is a great recipe that is not only yummy but requires an ingredient that is readily available to all right now.

Quick and Easy Penne with Shrimp and Herbed Cream Sauce

My wife and I love this recipe and thought I would share it.  We originally found it on www.foodtv.com. It's by Giada De Laurentiis--so you know it's good! You can 'lighten' this dish by reducing the cream and subbing low-fat milk, also use whole wheat pasta instead of traditional.  It's a great recipe for entertaining.

Easy Corn Dip Appetizer

Ingredients:

  • 2 cans mexican corn (drained)

  • 3/4 cup mayo

  • 1 two cup bag of 4 cheese blend cheese

  • chopped onion to taste

Mix all ingredients together in a casserole dish and bake at 350 degrees for 35 minutes.  Serve hot with tortilla chips or scoops.

Cool Summer Recipes: Easy Cactus Salad

With it being so hot lately its nice to have some new and delicious salad ideas.  I bet a lot of people out there have not tried cactus.  Here is my favorite cactus salad:

1 jar of cactus drained

1/2 shredded washed cabbage

2 tomatoes chopped

2 tablespoons chopped cilantro

1 jalapeno chopped

1/2 onion chopped

1/2 cup of queso cresco or fresh mozzarella cheese shredded

 

Mix all the vegetables sprinkle with lime and then sprinkle with the cheese and serve with chips or tostadas

SOONERS CHILI

Sooners Chili

2 teaspoons oil
2 onions chopped
3 cloves garlic
1 lb lean ground beef
1 lb beef sirloin cubed
1 14 1/2 ounce can of diced tomatoes
1 can dark beer (not optional)
1 cup strong coffee
2- 6 ounce cans of tomato paste
1 can beef broth
1 tablespoon brown sugar
3 1/2 tablespoons of chili sauce
1 tablespoon of cumin
1 tablespoon of cocoa
1 teaspoon of oregano
1 teaspoon of cayenne
1 teaspoon of salt
4 15 ounce cans of kidney beans
4 chili peppers chopped

Heat oil ,cook onions, garlic and meat until brown, add tomatoes, beer, coffee, tomato paste and beef broth
Add spices stir in beans reduce heat and simmer for 1 1/2 hrs. Enjoy in moderation...or not!

Zucchini Soup

pearlaIn this cold and wet weather there is nothing better than a warm and healthy soup. This is one of my favorite soups with Mexican tradition. You can change the amount of jalapeno according to your taste.

Zucchini Patty Soup
2 medium zucchini washed and sliced in circles 1/4 inch thick
1 tablespoon of olive oil
1 onion chopped
3 tomatoes chopped
1/2 jalapeno pepper chopped
1 garlic chopped
2 bouillon cubes
5 cups of water

Fire Roasted Vegetable Salsa

pearlaI know we are a restoration company but we are also great eaters and to continue with the fire theme I have added a recipe that includes roasted tomatoes and peppers. There are thousands of ways to prepare salsa, and different dishes are better with different salsas. There are sweet salsas, hot salsas, green salsas, red salsas.  I would like to share with you the salsa I use to put in chicken or beef soup.  This salsa is also good just on plain chips. 

Ingredients
6 Tomatoes ( I use roma since that is what we planted this year)
2 Jalapeno peppers
1/2 onion
1 tablespoon of cilantro
1 garlic clove
1/2 teaspoon of salt

Turn your broiler to high. Place some aluminim paper on your broiler pan so you dont have to wash it. Wash the tomatoes and the peppers and cut them in half and place them on the broiler pan. Peel the garlic clove slice it and place it next to the tomatoes and peppers. When they are browned, turn them over and let it cook on the other side. Place the tomatoes, peppers, garlic and salt in the blender, press the pulse button about 4 or 5 times depending on how chopped you want it. Chop the onion and the cilantro and mix in or you can arrrange the chopped onion on top and the cilantro on top of the onion.
